I use this frosting recipe on my chocolate cake. It’s really simple, just 2 ingredients.
Chocolate Frosting
The texture is a mix between “regular frosting” and cool whip. The only downfall is having to prep the day before use to harden in the fridge. Otherwise, it’s absolutely delicious. The chocolate also overrides the coconut flavor if you’re not a fan.

To a saucepan add the following ingredients.

14 oz can of coconut cream or coconut milk

1 1/2 C Enjoy Life Mini Chocolate Chips

Melt over medium heat until it low boils. Boil for just a minute. Remove from heat and pour into a glass bowl.

Allow to cool for about an hour. Then cover to harden in the fridge overnight or at least 6 hours.

When you are ready to frost your cake use a hand mixer to blend and fluff up your frosting. Sometimes I break up the hardened frosting with a butterknife before using the hand mixer to help get it going. I always start on low speed then increase to high when blending. Mix until smooth and creamy.

This is enough frosting for a 9×13 cake. Use right away.
