I started making this breakfast bar for my sweetie.

The store brands were getting smaller and smaller and packed full of sugar. He works hard and needs more sustenance. The recipe calls for bananas. Bananas are hard for me to digest and have properties that mimic gluten otherwise I would eat too. But he says they are wonderful and filling. Hope you like them as well!

Add the following ingredients to a large bowl.

  1. 3 medium ripe bananas

  2. 1/2 C Skippy Natural peanut butter

  3. 1/4 C pure maple syrup

  4. 1 t pure vanilla extract

  5. pinch of salt

  6. Mix using a hand mixer until creamy. Then add 3 cups of GF oats, mixing again.

  7. Lastly add 1/2 C of your choice of flavor – chocolate chips, blueberries etc. The choice is really yours.

  8. Mix.

  9. Press your mixture into a parchment lined dish. I use a 9×5 but an 8×8 would work or even a pie dish.

  10. Bake at 350 degrees for 29 minutes.

  11. Cool and slice into bar pieces. We baggie and store in the fridge or freezer.
