Almond Crusted Turkey Patties

This is a nostalgic one. My mom used to make almond crusted turkey patties growing up and I always loved them.

This brain of mine randomly remembers things so I concocted to the best of my ability. The result is below.

The recipe reminds me of a meatloaf but better. The almond pieces create this chewy, salty crust. The turkey, onions and seasonings make for a moist, flavorful filling. I enjoy the process of making and the taste takes me back.

The patties make for an easier serve and storage too.

Ingredients
  • 2 lb ground turkey
  • 4 chopped green onions
  • 4 egg whites
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 2 tsp Real salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 1/2 cup almonds – for the crust
Instructions
  1. High speed blenders are a plus for gluten free cooking. I use my ninja blender for many recipes including this one.

  2. Start by chopping your almonds. I put 1/2 C of almonds at a time in a blender cup and pulse twice. Ninja blenders are very powerful, you do not want to create a paste. The goal is almond pieces. Some powder is fine but essentially you want little almond pieces. Repeat until you have 1 1/2 cups. Pour onto a plate and set aside until your patties are made.

  3. In a large bowl add all of the remaining ingredients. I mix this with my hands. It’s the only way I know how to really incorporate all of the ingredients.

  4. Form your meat mixture into 10 individual patties.

  5. Coat your patties by lightly pressing them into your almond pieces. Flip so each side is evenly coated. Place your patties onto a broiler pan.  Repeat until all of your patties are coated.

  6. Bake at 375 degrees for 30 minutes.

  7. Allow to rest a few minutes before enjoying.

  8. I eat with veggies and fruit but would pair well with mashed potatoes.

  9. I also freeze to store for quick options.
